Top Gun has some open practices. I've also heard of, but not been to, Center Road.

There is a new place called K-Bar-M ranch north of Union SC. It's pretty fun with a lot of hills and rocks and a few small river crossings.

If you are a really good MX rider you might want to try out Andrews MX facility near Concord. It is just a few minutes from I-85, but be warned, that place is NOT for beginners. It is a supercross track with hills & doubles that are not for the faint of heart.
Try going to ncdirtrider.com and look for SC & NC tracks. I think you will be pleasantly surprised.
