has anyone who changed fork springs to the proper value for their weight noticed an increase in high speed headshake?

No. I went from .40kg to .43kg Eibach XR400 springs and have had no head shake issues with 5mm preload. Check your rear preload. You may need to decrease it a bit to get rid of headshake. What is the preload on your fork springs? Is your oil height at at least 100mm from the top (springs out and fully collapsed)? These settings will effect head shake.
