oil in 01 yz250 forks....

i just changed my fork seals in my 01 yz250 and was wondering is there a certain way to change the fork oil, and also, where does the oil get put in and how do i know how much to put in? any suggestions on oil weight, didnt know if different climates had different effects, im in south mississippi......thanks
