Everything you say rings true. I do find that countersteering has helped me riding in the dirt. Push the handlebar in the direction you want to go and in effect push the bike down. As the rider, you try to stay upright as you said.
It is definitely a different type of riding style altogether. After a few sessions at the track, you'll start to have a feel for the bike and how it maneuvers.
